British free range pork salami that is based on a Greek Cypriot village sausage known as loukaniko. Using the Shinos seed, which is indigenous to the Mediterranean, we’ve created a traditionally nutty & earthy flavoured salami. The ideal store cupboard salami that can be eaten as is with some cheese or used with an array of cooking dishes. Made with red wine from the Troodos mountains of Cyprus, free range British pork, slowly fermented for 2-3 days after being oak smoked for 8 hours in our one of its kind walk-in smokehouse. Then aged for up to one month in our state of the art ageing room.
