Black Bean as it was meant to be, not oily, not too salty, but intensely flavoured. Use as a stir-fry sauce (stir-fry your ingredients, add sauce and heat through) or as a baking sauce - try salmon fillets on sliced ginger, smothered in Yau's Black Bean Sauce and baked in foil. Classic combinations include beef with green peppers or onions. For a vegetarian option, use aubergine and mushrooms.
